Peanut butter is a favourite addition when it comes to greens across southern and East Africa, particularly in Zambia, Zimbabwe, Tanzania and Uganda. In Southern Africa, peanut butter and tomatoes would be the norm. In today’s recipe I have spiced it up with the East African influence.
Spice mix
1 tsp ground coriander 1 tsp cumin seeds 1 tsp caraway seeds 1/4 tsp ground cloves 1/4 tsp ground cinnamon 1 tsp white pepper 1 tsp turmeric
10 cardamom pods…. yes!
